today i used australian mini pork belly. it’s not as tender as the 五花肉 i’ve used previously. this is 五花肉. same marinate can be used for this as pork chops.

stuff needed for marinating evoo, garlic and onion spice blend, basil and rosemary, black pepper and baking powder.
this is the amount of herb and spices used… that is a teaspoon… do adjust according to your tastebuds. marinate overnight or for at least 3 hours. salt should only be added just before cooking as it will draw out the moisture from the meat while marinating.

this is after marinating add some salt and its all ready for the pan.
heat up pan. use high fire. make sure that pan is HOT! for pork belly, place the skin side down first. turn the fire down to medium.
when u see about 2mm of the skin side turn colour, then flip the pork belly to its side. when u see about 2mm of the down side turn colour, like in this pic, it’s time to flip to cook the other side. please note, you don’t have to keep on turning or checking their doneness. the other side should take about half the time of the first side. for pork chops, when u see the rim of the pork chop turn colour, then it’s ready to flip. cooking time for pork chops will be much lesser, so keep an eye out.
