This apple cake is taken from Eat Magazine, recipe by Ng Lay San. The original recipe calls for 25gbof almond flakes to be sprinkled over the top before baking. Its apple to be sliced thinly, lemon juice to be squeezed over the slices and to arrange the slices on a greased 9 inch cake tin b4 spooning the cake batter over the apple slices.

I preheat oven to 160 deg C. Original recipe calls for 180 deg c

Cream butter n sugar
Add egg
Add half the sifted flour
Add milk
Add remaining flour
Each addition to be well combined b4 adding the next ingredient

I diced a big Pacific rose apple. Add to the cake batter.

Fold the apples using a big spoon.

Pour the mixture into a loaf pan.

Bake for 40 mins.

I omit cinnamon as elder boy does not like the spice.

Almost forgot to add: bcos I folded the diced apples, I need to bang the loaf tin on the table a few times to let the air out b4 baking
