I hv finished making the rice dumplings.

the meat portion (think it is about 500g) makes 21 small sized rice dumplings. Still hv glutinous rice left.

Started at 12.48

First batch 8 pcs into the boiling water at 1.08

Second batch 8 pcs into boiling water at 1.23

Last batch 5 pcs, not cooked yet.

Flavour:

Rice not salty at all. I did not follow 1 tbsp salt for 1kg rice. Also lacking the punch from garlic. Next time will use more salt n loads of garlic juice.

Eating my second rice dumpling now. Not oily like 鹹肉粽。

Filling:

I used fresh shiitake mushrooms, result better than soaked dried shiitake mushroom as can taste its natural sweetness.

The portion of candied winter melon to diced pork is just nice for me.

Maybe should hv use a little more dark soya sauce for colour.

White pepper not enough. Again, I chose to use lesser than 1 tbsp. for 500g pork.

My mum always say eat tomorrow nicer. Fresh out of the pot one not as nice.

But how to wait?

here is the recipe I adapt from

I did not use pork lard.

2 kg glutinous rice, soaked for 3 hours, then drained, set aside
2 tbsp. salt
3 tbsp. oil (this one I agar agar)
3-4 garlic cloves (I will increase this as I like a more garlicy rice flavour)

Pan fry the garlic in the oil, add the rice and then add the salt. Set aside to cool down.

800 pork, diced (minced wont hv the chew texture)
200g winter melon (I diced them into smaller than the diced pork sizes)
100g dried shiitake mushrooms (I use fresh ones, ard 80g though my rice is only 1 kg)
50g minced garlic
100g thinly sliced shallots (I use more than 100g)

Seasoning for the filling:
2 tbsp. white pepper
6 tbsp. coriander seed powder
2 tbsp. dark soya sauce
2 tbsp. sugar
8 tbsp. oil (this I agar agar)

I did the following:
Fry the garlic and shallot till fragrant
Add the mushrooms,
Add the pork,
Add the seasonings,
Off the heat, add the winter melon

Btw, I halved the original recipe.
