If you are interested in making your own Nyonya rice dumplings, I would advise cutting the pork into a few smaller portions, then semi-freezing the pork first, before taking out for dicing.

I thawed my wet mkt bou pork too early, this morning the whole piece was so unmanageable that I took a longer than estimated time in dicing. Luckily my kitchen knife is still sharp.

A semi-freeze piece of pork gives a better gripe and the sizes of the diced pork can be more uniform and small.

This the the brand of leaves I bou. According to the shop owner, this brand has 2 sizes: big for Bak Chang, small for Nyonya Chang.

I soaked in tap water last night till this morning. Quite clean. No need to boil as these are soft n manageable.

In the pack, there are 2 bundles.

I used only 1 bundle which has slightly > 56 pieces of leaves. I threw away a few torn in the middle ones. So maybe around 62 pieces and 1 bundle is likely to be enough to make 30 dumplings.

Btw, the pack does not come with strings. Hv to buy separately.

I always love to eat rice dumplings. But the store bou ones usu. loaded with MSG. It's bn very long since I last ate rice dumplings. Those MIL made are sometimes too oily for me. Her QC not consistent year to year :wink:

Aunt used to make for us too. But also noticed taste is off and sometimes not totally cooked. Think age catching up with her and affecting taste buds. So nowadays, she also buys and gives us. We love those mini nonya dumplings. Just nice for breakfast.

Just came back from a tedious errand. Log onto ksp and saw yr handsome looking bak chang, 心情顿时变好些... :smile:

Not sure yet want to try this yr or not....will decide by this weekend, hopefully...
