Yah, one of my relatives used to live there. Whenever we visit her we will smell that wonderful bread aroma.

This one turned out not good. The radish has a bitter taste. Maybe I should have soaked the cubed radish in water b4 draining to add sea salt.

The other day the radish I bought also had a bitter taste. So u mean we must cut & soak to leech out the bitter taste? Some radish got this bitter taste, some don't. How to tell ? :?

I love achar too.

Hubby likes kimchi, esp. the radish, chives, garlic chives, cucumber n dried mustard? types, in other words, the crunchy ones.

I also dunno. This portion of radish was leftover from the radish stew I made the other day. Those in the dashi stew were not bitter as I soaked them in water b4 use. So I thought this kimchi ones is bitter cos I did not soak.

Thanks maybe I'll do the soaking next time ...

Just happen to see this when googling for bitterness of radish :

"If you taste your kimchi and it seems very bitter, leave it to ferment for additional 24 hours. I did it and miraculously the bitterness disappeared!"
