Hainanese chicken rice recipe

The broth was too diluted to be drank as soup. I added sliced lotus root n a small piece of dried octopus and boiled for 30 mins before serving during dinner.

Did not follow the instruction to simmer the chicken for 30 mins. I simmered for 15 mins, then off the heat with the chicken in the pot, covered for another 15 mins.

Removed from the pot, did not do the ice bath n let the chicken continued to cook. Nicely cooked through, chicken breast meat still tender and the chicken thigh was cooked through.

Japanese tonkatsu - baked pork loin

I used pork loin, less than 1cm thick.

First batch (2 slices) baked for 15 mins, too dry though tasted good.

Second batch baked for 10 mins, juicy but crust not crispy like the first batch.

Instead of salt n black pepper, I combined diluted oyster sauce and a little light soya sauce n brushed onto the pounded pork loin to marinade them.

The pan fried bread crumbs are tasty on its own. I bou a Japanese brand panko.

Did not get to fry the oil to add to the minced garlic.

Instead, minced garlic was combined with diluted oyster sauce+light soya sauce n then spread over the prawns before steaming.
