Anyone know why the water turn blue when I boil the scallop?
The blue liquid comes out of scallops that are spawning. The spawning process creates the extra moisture in the meat that bleeds out when the meat is cut out of the shell, and cooked. The blue color in the liquid is due to a change in the natural chemical composition of the scallop meat during spawning.
