Prawn batter - how to make it stay crispy after sometime?

Does anyone know the secret of keeping the fried prawn batter to stay crispy for a longer time?

use one of those tempura flour from Japan but do it in the style of fish and chip (use fish & chip recipe)

the coating on the prawn must be complete such that no oil leaks in through the batter, plus obey the oil temperature needed for the recipe

1. If you don't mind the alcohol, you can add beer to your batter mix.
2. If you don't drink, you can add some ginger ale.

after trying various types/brands of flour, i finally stick to the tempura flour from Japan,
but i dunno whether are we referring to the same flour :wink:
yes, very crispy and temperature control of the oil (hot enuff) is crucial for the crispyness of the batter.

duriz, can i know where to get ginger ale (supremarket??)
any particular brand ??
will the batter taste "ginger"

got the Nissin (日清) brand, 700g pack, the packaging itself is a ziplog back, easy to keep and store the unused portion

incidentally, it has a picture of tempura prawn on the packing

just went to the kitchen and check, yes...it's the same 日清 brand
now u mention 日清, then i know is nissin brand,
all the while, i only recognise the packaging with the tempura prawns :wink:
i bot the 500 g one....no ziplog

i used for tempura prawns, fish and chips, ever try for goreng pisang (bananas) too :wink: :D
