The way I do it is, first, "guo you", that means to do a quick fry in hot oil, then steam to 3/4 cook, then fry again.

Never know you will become a cook now...

Anyway, for the spare pork ribs, I heard some friends told me, the trick is before you even cook the spare ribs, as in after seasoning, put it in a plastic box and shake it...and somehow the pork will turn out to be tender.I have tried it out for chicken and it works, for pork , maybe, it works...you can try it out.

I am not a cook but does it help to add cornflour????

I know my mum always add cornflour to pork and it makes the meat very tender after that. So we usually use cornflour to season pork as well as mince meat.

Add the following to season.
2 tbsp plain flour
1 tbsp custard powder
1 tsp bicarbonate of soda (or so call baking soda)

Tap with corn flour, then fry. Also applicable for pork chop.
