Until today saw Jen's lovely buns. So today gotta try kopi bun. If success, going to make some for DCs' teachers again.

hand knead.

soft, but dense, not fluffy.
I did not knead till window pane stage, muscle power insufficient. Think I would try the recipe again with the Kenwood mixer, and at the same time to increase the sugar n to add some softened butter.

Bread needs a lot of skill in kneading to get right constituencies & fluffiness.

Jennifer, admire you enuf that u've done so much home baked bread. 加油!

Jen, I also did not have breadmaker. Also use hand kneading. Arms aching. Did not knead enough to make the bun fluffy. But can eat can liao. :boogie:

My DC2 loves to be in the kitchen with me. So we made Kopi Bun together. But the coffee not enough. We can add more. Colour wise not brown enough because we should have added some cocoa powder.

DC1 doesn't like kopi, so we replaced it with hersey chocolate.

I used this recipe from the blog. Not too sweet. But I felt can add more than 2 tsp of coffee powder as stated. In fact, I added 3 tsp and still not enough. Kopiboy said should add 1 whole paclket woah. Also told DC2 not to be so stingy, should have pipe thicker on the bun.
